Orange Muffins



Hubby bought some oranges but complained that it was a little too dry for him, so I've got 5 oranges left in the fridge. What to do? So I found this recipe online and the muffins turned out delicious! The original recipe had some chopped walnuts in it, but I didn't have any at hand, so mine is just plain orange muffins. Also, I used salted butter, so I didn't add any extra salt.

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup white sugar
1 tablespoon grated orange zest
2/3 orange juice
1/2 cup melted butter
2 eggs

Topping:
1 tablespoon melted butter
1/4 cup packed brown sugar (I use white sugar)
1/2 teaspoon ground cinnamon (not a fan of cinnamon, I only use a small pinch)

1. Combine flour, baking powder, baking soda, white sugar and orange zest.
2. Mix the juice, melted butter and eggs and gently fold in the dry ingredients. Don't mix too hard or too long or the muffins would turn out hard.
3. Pour into muffin cups till 3/4 full.
4. Mix topping ingredients together and sprinkle on top of each muffin.
5. Bake in preheated oven (350F / 175C) for 20-25 minutes.

Chocolate Madness Muffins



I remembered ever making a mean batch of double chocolate muffins but I can't seem to find it in this blog! After searching around my other blog, I found it! The original recipe comes from my favourite cook book, Donna Hay, Simple Essentials: Chocolate.

The original name was Milk Chocolate Chunk Muffins, and uses 1 cup of chopped milk chocolate. But I've only got chocolate chips in my fridge, so I added 1 whole cup of chocolate chips into the muffin mix! Haha... A little overkill, but my friends absolutely loved how chocolatety the muffins turned out!

2 cups self raising flour, sifted
1/3 cup cocoa powder, sifted
1 teaspoon baking powder
1 cup caster sugar
2 eggs
1 teaspoon vanilla extract
2/3 cup vegetable oil
1/2 cup milk
1 cup unsweetened chocolate chips

1. Preheat oven to 180 degrees celcius
2. Mix flour, cocoa powder, baking powder & sugar
3. In seperate bowl; mix eggs, vanilla, oil & milk
4. Mix wet mixture to the dry mixture
5. Fold the chocolate chips into the mixture
6. Spoon mixtures into muffin tins lined with paper cups
7. Bake for 20mins or until cooked when tested with a skewer

Serve with a hot cup of coffee!

Chocolat N' Spice Muffins

My FAVOURITE place for a muffin is the undefeated Chocolat N' Spice. I've been patronising the store for years. My previous office is just next to it, so naturally we were frequent customers. But surprisingly, fanatics can be found even at the Clementi area, my current office.



We always buy in BOXFULS... there are so many different flavours! Orange, cheese, chocolate chip, banana, walnut, blueberry, etc.etc.



But my ultimate favourite is this beauty... Double Chocolate



So chocolately and more importantly, SO SOFT AND MOIST! See the chocolate chips inside!
